QUICHE LORRAINE. 

Quiche is an exotic dish.I love it because of its distinctive flavours and exquisite ate that is mouth watering. I remember the first time I heard of the dish, I could hardly pronounce it’s name and thought it was the hardest dish to prepare. But I was amazed at how easy it was to prepare the dish. 

Quiche is a savoury tart that originated from Lorraine a region in France. It is an open-faced pastry crust with a filling of  savoury custard. It is served as a cocktail item or Hot First Course item. 

How to make your very own Quiche

SHORT PASTE FOR QUICHE. 

INGREDIENTS. (recipe qty 200gms) 

135g  sifted self raising flour 

60g soft butter

50-55g cold water

Pinch of salt

PREPARATION. 

Sieve the flour and rub in the butter with both hands without forming a paste but rather bread crumb like paste. 

Add the salt and water to the bread crumb like paste and mix well to form a paste

Cover the paste with a damp cloth or cling film and place it in the refrigerator for further use. 
MINI QUICHE LORRAINE. (RECIPE QTY:2 PORT) 

INGREDIENTS. 

100g short pastry

30g Streaky Bacon cut to fine strips

20g Cheese(any good hard cheese) grated

1/2 PC Egg

80ml Milk

50g Onions finely chopped or sliced 

Pinch of ground Nutmeg 

10g Butter

Pinch of salt and white pepper powder

PREPARATION. 

Fry the onions and bacon in the butter until golden. Beat the eggs with the milk,nutmeg,salt and the cheese

Roll the short paste thin(about 3mm thick) Then place it on the baking sheet, prick the bottom a few times with a fork. 

Cover the bottom with the prepared bacon and the onions and pour on the egg and milk mixture (royale) .

Chopped herbs may also be added to the royale. 

Bake in a moderately hot oven 190degrees for 20-30 minutes until just firm. 

Allow to cool then remove from the mould
