A Calzone is a dish that originated from Italy. Looking like a folded pizza it consists of bread dough wrapped around a filling. The filling can either consist of Salami or ham, Mozzarella cheese, Ricotta cheese, Parmesan cheese or Pecorino cheese, vegetables as well as egg. Different regions in the world have different stuffing’s in terms of their preference. Well today i will highlight an ancient Italian recipe that contains tomato and garlic which can be enlivened with chunks of sweet melting cheese, olives, crumbled grilled bacon, slices of pepperoni or chorizo, a few chopped anchovy fillets.



  • 30 ML Extra Virgin Olive oil.
  • 1 small red onion,thinly sliced
  • 2 garlic cloves, crushed
  • 400g chopped tomatoes, skinned and deseeded
  • 50g sliced Chorizo Sausage
  • 50g pitted black olives
  • 200g of Mozzarella cheese or any other soft cheesediced
  • Salt, black pepper, 1 tsp of dried oregano


  • 4 cups of self raising flour, sifted
  • 1 teaspoon of sugar
  • 1 packet of instant  dry yeast
  • 2 teaspoons of salt
  • 2 teaspoons of olive oil, 2 table spoons of olive oil
  • 200g of Mozzarella cheese or any other soft cheese, diced


Lets start by making the pizza dough.

Combine the self raising flour, sugar, yeast and salt in the bowl and mix together. Add the water and 2 tablespoons of the oil and knead until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.


Once the pizza dough begins to rest you can prepare the filling. Heat the olive oil in a cooking pan  and saute the onion and the garlic for 5 minutes,until softened. Add the tomatoes and cook for five minutes more or until slightly reduced. Add the chorizo and olives.Season well (salt, black pepper). Allow to cool


Knock down the dough , and divide it into two portions. Roll our each portion to a 20 cm diameter . Pre heat the oven to 200 degrees.Then lightly grease two baking trays. Spread the filling on half of each dough circle, leaving a margin around the edge. Scatter over the cheese on top of the filling and sprinkle the dried oregano too.Dampen the edges of the dough with cold water, fold the dough in half and press well to seal.

Place the Calzones on the baking tray and bake for 12 to 15 minutes until risen and golden brown. Cool for two minutes then loosen with a palette knife and serve.
